Grated Apple Yields a Moist Snacking Cake

I found and adapted this apple spice cake recipe from Dr. Andrew Weil’s site. It’s very moist and chock full of apple and spices. This will be an ongoing classic; not too sweet and great with coffee.

INGREDIENTS:
- flour – 1 cup
- salt – 1/4 tsp
- nutmeg – 3/4 tsp
- cinnamon – 1 tsp
- baking soda – 1 tsp
- baking powder – 1/2 tsp
- sugar – 3 TBS
- dates – 1/4 cup, minced
- flax meal – 1/4 cup, [optional]
- walnuts – 1/2 cup [optional]
- apple – 2 cups, 1 large, peeled, cored, and grated
- butter – 3 TBS, melted, then cooled
- eggs – 2
- yogurt – Greek style, 1/2 cup [optional]

DIRECTIONS:
- Combine the dry ingredients in a large bowl
- Combine the apple, melted butter, eggs, and yogurt [if using] in a small bowl
- Preheat the oven to 350º F
- Oil or butter a 9 x 9 pan or any shaped pan with about 80 sq. inches [I used an oval casserole, but also consider a bundt pan
- Add the wet mix to the dry mix and combine until just mixed; don’t over mix
- Bake for 30-35 minutes and begin to check by inserting a toothpick in the center; it’s done when it comes out dry and the crust is chestnut colored
- Allow to rest for 10 minutes and then flip out and cool

SERVING SUGGESTIONS:
A dollop of whipped cream or Greek style yogurt or apple sauce or apple butter. I love this with an afternoon coffee!

Mango Spiced Cake […and other fruits]
If apples work, why not pear, stone fruit, soaked dry fruit. I did a straight 2 cup replacement with diced mango and included the flax seeds, walnuts, and yogurt with great success; the cake is moist and balanced
