Caprese Salad

Tomatoes Wed Mozzarella Under a Garland of Basil

If you are a tomato grower, or have access to just picked maters—this will be a salad fix; I promise.

There is actually no written recipe, so here are the most favored ingredients. If you have the ambition you can also simmer the balsamic vinegar under low heat until it thickens, then cool.

INGREDIENTS: My photo shows string mozzarella! That’s all I had and the dish forgave me

  • tomatoes, fresh – thickly sliced
  • mozzarella – fresh, thickly sliced
  • olive oil – to drizzle
  • basil, fresh – lots—to tear
  • balsamic vinegar- to drizzle
  • salt & pepper

INSTRUCTIONS:

  1. Slice tomatoes and mozzarella about a quarter inch thick
  2. Interlace them on salad plates or a family size platter
  3. Season with salt and pepper
  4. Drizzle with olive oil and balsamic vinegar
  5. Tear and sprinkle basil leaves about the plate
