Bronzed Mushrooms

Fancy Schmancy Shrooms Come Calling

I’m a lover of mushrooms all ways. This is a straight forward dish that harnesses flavor from just a few ingredients. Use as a side dish or over baked potatoes; most anything that needs a hit of umami and a bit of glory

INGREDIENTS: Vary the mushrooms, all and any type will work

  • mushrooms – 1 LB, cleaned, large pieces
  • neutral oil – 2 TBS
  • baking soda – pinch [optional, aids in browning]
  • blackened seasoning – 1 1/2 tsp, to taste [or try Old Bay or Herbes De Provence]
  • blue cheese – 2 TBS, crumbled
  • balsamic vinegar – 1 tsp, [or red wine vinegar] to taste
  • pepper – 1/8 tsp
  • fresh herbs – thyme, rosemary, sage, or parsley

INSTRUCTIONS: Blackened seasoning and other blends have salt in the formula so check to balance seasoning at the end

  1. Wipe the mushrooms with damp towel, trim up the bottom stem and cut into large chunks
  2. Heat a large non-stick skillet, add the oil and a pinch of baking soda
  3. Sauté the mushrooms over medium high heat with half the blackened seasoning; don’t toss for a few minutes to help develop color
  4. Toss the mushrooms and add the other half of seasoning
  5. When bronze colored [about 6-7 minutes], toss in the vinegar
  6. Off heat add the cheese and herbs, then do final taste test

PLANNED OVER DISH: Toss into beaten eggs and enjoy a craft frittata, or reheat and spoon over scrambled eggs. Great over open faced toast!
