Slow-Cook Potatoes, Onions, and Sausage for an Easy Comfort Meal
I got interested in this recipe accidentally scrolling by a media video. It actually was titled, Hot Dog Hash. Hey! I had a pack of wild pastured hot dogs hanging out in the freezer. Why not?
It’s almost too easy and sports a deep-down satiety. Think of it as a warm stacked potato salad.
After my first try, I’m in it to expand the options and offer you a quick way for a simple, homey dish.
INGREDIENTS: Also consider bacon, hamburger, Italian sausage, kielbasa, or other fatty protein. For a vegetarian version, opt for shiitake or mistake mushrooms
- hot dogs – 1 LB, half inch coins
- potatoes – 1 1/2 LBS, peeled, 1/2 inch cubes
- onion – 1 large, chopped
INSTRUCTIONS:
- Spray or brush slow cooker pot with oil
- Add the potatoes in a single layer, followed by the onions, and finally the cut up protein
- Cook on slow for about 3-4 hours, until potato and onion are tender, or cook on high for half the time
- Taste the potato and onion for doneness and seasoning
ADD-INS: About halfway through, I added a 1/2 cup white wine, and 2 cups of sauerkraut without mixing it in. After cooking I added 1 TBS cider vinegar to sharpen the flavor
SIDE DISH: Serve with a crunchy coleslaw
TABLESIDE: Mustard, ketchup, and hot sauce with crusty bread


I peeled the Yukon potatoes, but that is optional
