Cottage Cheese Puddings

No-Cook, Make In-a-Minute Dessert

I’m ever in the hunt for quick and repeatable desserts. Cottage cheese makes for a great base! I caught this hack on the internet and tweaked a few to my pleasure. Just add a few more ingredients to make chocolate, mocha, key lime, and so many other puddings. Let’s go!

KEY LIME PUDDING – Use either key limes or Persian limes, and change out the crust with other cookies

Serves 2 -3 Can easily be doubled

  • ginger snap cookies – 3-4, crushed [for crust]
  • cottage cheese – 1-1/2 cups
  • Greek yogurt – 1/2 cup
  • vanilla extract – 1 tsp
  • maple syrup – 1/3 cup
  • lime zest – 1 TBS, [zest before cutting limes]
  • lime juice – 3 TBS

DIRECTIONS: I use pint size canning jars for ease of blending with an immersion blender. Or mix larger batches in a blender jar and then ladle into serving dishes

  1. Crush cookies and tamp into the bottom of a serving dish, bowl, or canning jar [see above]
  2. To another canning jar add the remaining ingredients
  3. Use an immersion blender and puree
  4. Spoon onto the crust and chill for a couple hours

COTTAGE CHEESE CHOCOLATE OR MOCHA MOUSSEHard to believe this comes from cottage cheese!

  • 1 cup c. cheese
  • 2 TBS cocoa powder 
  • 3 TBS sweetener [or to taste]
  • 3 TBS milk
  • 1/2 tsp vanilla
  • instant espresso or coffee – 1/4 tsp [for the mocha version]
  • Optional Add Ins
    • peanut butter – 1 TBS
    • chocolate sandwich cookies – 2-3, crushed for crust

INSTRUCTIONS: For a crust crush chocolate sandwich cookies and press into bottom of bowl or serving dishes, [or I see you can push whole cookies into the mousse so it softens and acts like a “tiramisu” texture]!

  1. If making a crust, crush cookies and place in bottom of serving dish or bowl
  2. In an immersion blender or jar blender combine the remaining ingredients and puree
  3. Spoon into serving dishes or bowl and chill thoroughly
