I’ve spent a good deal of my past 30 years making dishes that can be reformulated into something else as it awaits another turn from my fridge. This is classic Recipe Multiplicity—One Recipe—Many Ways: A nice technique to master.

I bought an Instant Pot multicooker and wanted to learn the pressure cooker method. Their recipe for Coconut Ginger Carrot Soup was straight forward—a nice entry level start. The soup was fine, but lacked depth—it was a one-and-done type recipe. Then I began to stretch and deepen it during the week with other saved planned-over odds and ends. I love this soup base enough to make it one of my recipe standards now.

I like it because it has ginger spice and a nice color. Almost any soup will work as a base.

Coconut, Carrot Ginger Soup

INGREDIENTS:

  • olive oil – 1 tbsp
  • onion – 1
  • garlic cloves – 2
  • fresh ginger – 3 tbsp
  • carrots – 6 cups
  • celery – 1 rib
  • vegetable stock – 5 cups
  • coconut milk – 1 can
  • salt – 1 tsp
  • pepper – 1/2 tsp
  • cumin – 1 tsp
  • turmeric – 1/2 tsp
  • paprika – 1/2 tsp

INSTRUCTIONS: Go ahead and sauté the onion, garlic. Add in the remaining ingredients, except the coconut milk. Lock down the lid and pressure cook for 5 minutes, and then a 10 minute natural release. Add the coconut milk. Use a stick blender or a food processor to partially purée the soup.

Now we have the base soup. Let’s take it into Recipe Multiplicity reality.


RECIPE MULTIPLICITY: Planned-Over Soup Bowl Skills

Recipe Multiplicity induces you to leave small amounts of “planned-overs” from your meals. Don’t serve the last of a dish, instead—place the remains in a clear storage container, so it’s easily identified. Out of your leftover proteins, starches, and veggies will be a few reborn meals!

  • In my fridge are always some cooked grains, pasta, and/or spuds. That’s a given
  • I will have cooked greens or veggies in clear containers
  • I have lot’s of fermented pickles to top before eating
  • Cooked proteins or dried sausages—like pepperoni! A god-send, you only need a few slices to bloom a soup into a lusty affair!]
  • Planned-over legumes add texture and fiber
