What to Do with All That Melon?
I love watermelon, which loves me back by taking up so much space in my fridge. Wow, I fought back with this wonderfully refreshing summer salad. So quick to fix and a taste that marries melon and feta for a regular get together

INGREDIENTS: SERVES 4 [Easily Doubled]
- watermelon – 2-3 cups, random chunks, sliced into 1/4 inch slabs
- feta cheese – 1 cup, crumbled or in 1/4 inch slabs or to taste
- basil, fresh – 1/4 cup, leaves torn
- DRESSING
- olive oil – 2 TBS
- balsamic vinegar – 2 TBS
- salt – 1/4 tsp
- pepper – 1/8 tsp
INSTRUCTIONS:
- In a large bowl toss the watermelon, feta, and basil
- In a small bowl combine the dressing and pour over watermelon
- Serve cold
