Let’s Meet Up with This Distant Veggie
Cauliflower—such a beauty to behold and yet we hardly know her grace in the kitchen. Steamed, roasted, or grilled she becomes a gracious hostess of the meal. I will be building this page out over the next couple of weeks to offer you every reason to bring her to your table
Cauliflower á la Greque [Greece] – Enjoy chilled, room temp, or warm.
This salad of crisp-tender florets embraces the sunny isles of Greece

SERVES 6-8
INGREDIENTS:
- VEGGIES – Add other bite size veggies or sliced mushrooms as you like
- cauliflower – 1 head, 2 LBS, florets
- bell pepper – 1 cup, large dice, [and/or chilies]
- VINAIGRETTE – Optional herb blends to replace cumin, coriander, anise seed, and thyme: 2 tsp. Herbs de Provence, or Zatar
- lime juice – 2 TBS, PLUS ZEST OF LIME
- white wine vinegar – 2 TBS
- olive oil – 1/4 cup
- salt – 1 tsp
- pepper – 1/4 tsp
- cumin – 1/2 tsp, ground
- coriander – 1/2 tsp, ground
- anise seed, 1/2 tsp ground, [or fennel seed]
- thyme – 1/2 tsp dried, [or 1 tsp fresh, minced]
- GARNISH OPTIONS
- parsley, or cilantro, and/or chives
- kalamata olives
- cherry tomatoes
- feta cheese crumbles

INSTRUCTIONS: Steam or Air Fry
- STEAM: Steam veggies for 3 to 3 1/2 minutes, until cauliflower is crisp-tender
- AIR FRY: Lightly spray veggies with oil and air fry for 10-12 minutes at 380º, shaking basket at the halfway mark: until brown spots begin to form
- While still warm toss veggies with vinaigrette
- If serving warm, serve at this point
- If serving cold, refrigerate for several hours or over night
- Garnish and enjoy

Roast Cauliflower
3 Ingredients Brings Cauliflower to a Fine Finish
This recipe is easy enough to drop the formalities. In a large bowl combine a couple tablespoons of olive oil, 1/2 tsp salt, 1 TBS of a spice blend of your choosing [I love Middle Eastern varieties]. Toss in large chunks of cauliflower. In a 400º oven roast for 20 minutes, tossing at the 10 minute mark.
