Hardy Greens with Oyster Sauce

A Simple Sauce of Asian Persuasion

Remember “3-2-1” to make this simple umami-laden sauce. I love it on steamed or boiled greens: bok choi, broccoli, mustard greens….

There is almost no recipe if you remember: 3-2-1!

3 TBS water [from boiling greens]

2 TBS oyster sauce [in International aisle]

1 TBS soy sauce

1 tsp garlic, minced

1 tsp ginger, grated [optional]

Bunch of greens

Broccoli and Gai Lan {Chinese Broccolini}

DIRECTIONS: This sauce is enough for a bunch of greens to serve 4-6

  • Cut greens or veggies into bite sized pieces
  • Boil or steam them until crisp-tender
  • Reserve 3 TBS cooking water, then drain pan
  • Add a bit of neutral oil and saut√© the garlic
  • Add the greens back into the pan
  • Combine the water with oyster sauce and soy sauce
  • Stir in the sauce and heat through

Serve with toasted sesame seeds or chopped fresh herb or scallion greens

ADD ONS:

Asian sauces love tweaking:

  • a drizzle of rice vinegar
  • a pinch of sugar,
  • a tweak of hot chiles
